Author’s note: A small snack bar in the Center offers a number of choices for a quick meal.  While visiting the Center several years ago,  I had a small bowl of what was arguably the best chili I have ever eaten.  I wrote to the head of food services and she graciously shared the recipe with me.  Of course, her recipe served a whole lot of hungry visitors, so I did have to pare it down a bit.  It is a winter staple in my household!
