Local Restaurant Review: Guadalajara on Dell Range in Cheyenne

Guadalajara Cheyenne is one of two Guadalajara Mexican restaurants in Cheyenne. This one is located at 1745Dell Range, the other is called Hacienda Guadalajara on Lincolnway. Casper (two hours north of Cheyenne) also has a Guadalajara Casper.

I’m going to give Guadalajara Cheyenne a positive review, and if that’s a good enough recommendation for my loyal readers, skip to the end of this article nevertheless as it’s an easy restaurant to get to – only if you know the secret.

I was to meet two friends at this Guadalajara at noon. One of my two friends got here a half hour early, and was allowed to sit at a table and read while she waited for us. I don’t know if she requested that chips and dips be delivered immediately or if the waiter did it even though the two remaining people in her party wouldn’t be there for another half hour.

I therefore can’t tell you if the tortilla chips and the bean dip were served warm or not. What I can tell you is that both bean dip and salsa were placed on the table for the betterment of the tortilla chips!

Atmosphere

I love the atmosphere inside this Guadalajara. The walls and ceilings are painted in different colors, all of the chairs have bright designs on them.

Service

The greeter and our server were very cheerful and very attentive. We ordered one dessert for three people – our server came out with the dessert divided into threes for us without our requesting this.

The Food

I ordered a chicken chimichanga, as I do at all Mexican restaurants as part of my “Chimichanga Project.” (There were a lot of chicken dishes on the menu that I wanted to try – after the Chimichanga Project is over I’ll do so!)

I had been to this restaurant a couple of years ago. The way I remember it, my chimichanga was covered in a light cheese sauce. Not this time. As described on the menu, it was: “rolled deep fried flour tortilla stuffed with your choice of chicken, beef, pork or shredded beef, served with lettuce, tomatoes, guacamole, sour cream, rice and beans.”

(And I see now – consulting the menu online, is that I ordered the “traditional chimichanga,” and they’ve added a new name for the other one I used to order, the “Cheese dip chimichanga.” No guacamole, sour cream, lettuce or tomatoes with this one. Had I but noticed…)

In any event, although I do not eat tomatoes or guacamole, I did not ask for them to be left off because I wanted to share with my readers what most people would probably see:

I gave the tomato and the guacamole to one of my friends. There was a red sauce drizzled lightly on the chimichanga that was very tasty.

However, the top quarter inch was not chicken but an extra roll of the tortilla, so there was not as much chicken within as I had thought at first glance. Nevertheless, delicious.

The seasoned rice was warm, as was the refried beans. As with all refried beans I’ve had at Mexican restaurants, it was more watery than I like, but it was hot and mixed in with the rice it was delicious.

One of my friends had the Huevos Rancheros, according to the menu, fried eggs in red sauce. (It comes with three, she requested only two). It also came with a small container of tortillas, as well as the rice, beans and lettuce. She said it all was delicious.

My other friend ordered a fajita salad. The choices on the menu were “chicken or beef” but it came out as steak! Not only did she say it was delicious, but it certainly looked delicious!

For dessert, we ordered a chimi. We told the waiter we only wanted one, and asked for him to bring us three plates, as we intended to cut it into three portions.

He brought a very large plate with three chimis…and it appeared as if he were kind enough to give us three chimis for the price of one. (I didn’t want to ask him if that had been the case and ruin his kindness by having him explain it.)

The menu description: “Banana or strawberry stuffed in a flour tortilla, lightly fried and served with a scoop of vanilla ice cream and caramel sauce.”

If you like bananas in caramel sauce with ice cream, you’ll enjoy a chimi. How many calories? I do not know! But it was worth the calories.

Women’s Restroom

The door was a “push inward” door, moderately heavy. Inside were two stalls. The restroom itself was clean.

How to get here

As you come on Dell Range from either west or east, you will want to turn south onto Stillwater Avenue.

Take either the first turning on your left, into the Taco Bell parking lot, and drive through to the front of the Guadalajara Cheyenne;; or the second turning, just in front of the Old Chicago restaurant, and drive through to the parking lot behind the Guadalajara Restaurant (driving past the sign with the arrow pointing to the left and the Denver Mattress Company sign).

These two entrances on Stillwater are the only way to get into the Guadalajara on Dell Range parking lot.

Turn south on Stillwater, and then take the first turn to your left and drive past Taco Bell. If you take the second turn on your left, that's before the Old Chicago building.
